Tom Kha Soup (Spicy Coconut)

Ingredients:

  • 6 oz mushrooms (Beech or baby Bella)

  • 2 roma tomatoes, quartered

  • 2 lemongrass stalks, pounded in petal & morter

  • 3 limes, zested then juiced (~1/4 cup)

  • 2 Thai chilies or 1 Serrano , seeds removed and pounded in petal & morter

  • 2 green onions, chopped white bottoms and green tops separated

  • 1 bunch cilantro, stalks minced and leaves roughly chopped

  • 1/4 to 1/3 cup freshly squeezed lime juice (approximately 2 to 3 limes)

  • 1 good thumb of galangal, peeled and pounded

  • 4 shallots, minced

  • 2 tsp coconut palm sugar

  • 2 tbsp fish sauce

  • 1 Tbsp coconut aminos

  • 1 can (14 oz) coconut milk (full fat)

  • 2 cups chicken broth
