Tom Kha Soup (Spicy Coconut)
Ingredients:
6 oz mushrooms (Beech or baby Bella)
2 roma tomatoes, quartered
2 lemongrass stalks, pounded in petal & morter
3 limes, zested then juiced (~1/4 cup)
2 Thai chilies or 1 Serrano , seeds removed and pounded in petal & morter
2 green onions, chopped white bottoms and green tops separated
1 bunch cilantro, stalks minced and leaves roughly chopped
1/4 to 1/3 cup freshly squeezed lime juice (approximately 2 to 3 limes)
1 good thumb of galangal, peeled and pounded
4 shallots, minced
2 tsp coconut palm sugar
2 tbsp fish sauce
1 Tbsp coconut aminos
1 can (14 oz) coconut milk (full fat)
2 cups chicken broth
